Cold Curried Couscous
Great vegetarian serve cold dish for pot-lucks.
Ingredients:
- 2 cups natural evaporated cane juice - such as Florida
Crystals or similar.
- 2 cups water
- 3 pints cranberries - 24 oz by weight
- 1 tbls lemon juice
- Other fruit may be added in small quantities - we often
add a peeled chopped orange or tangerine
- Combine sugar and water.
- Heat to a boil, boil five minutes.
- Add cranberries and other fruit, cook till skins pop, then
reduce heat and simmer about 20 minutes
- If you want a smooth sauce you can run it through a food
mill while still hot, otherwise leave as is for a chunkier texture.
- Chill completely to serve.
- Makes 1 1/2 quarts
